WIAW: THAT WHOLE “FREE SPEED” THING

Hello, fellow Athletarians! Remember when I delved into the concept of “free speed” and how it transformed my perspective on nutrition? Well, the recent Easter festivities threw me a curveball. Let’s just say that an enormous bag of Mini Eggs from Costco seemed to vanish mysteriously! And boy, did I feel the aftermath of that sugar rush.

Now, with just 11 days left for my 10K race, I’m hoping to set a new personal record. Given my slightly relaxed regimen post the Phoenix event, this might be a challenge. But hey, if healthy eating can give me that extra edge, I’m all in!

Joining Jen’s WIAW today, let’s dive into my day’s plant-based fuel:

Morning Delight: While the photo is a summertime throwback, I assure you, my breakfast was a replica. A comforting bowl of oats infused with Vega Performance protein, chia seeds, and almond milk. Topped off with a fresh mix of berries, banana, and a dash of almond butter. Morning nutrition = check.

Post-breakfast, I laced up for an intense tempo run. Goal? A few consistent sub-8 minute miles. And guess what? I nailed it! Achieving times of 7:54, 7:48, 7:36, and 7:24 before cooling down. Eyeing a 7:15 average for the upcoming Toronto Yonge Street 10K might seem ambitious, but the fun lies in pushing limits.

Midday Recharge: Post-run, I treated myself to a hearty slice of lentil loaf, inspired by the Oh She Glows Cookbook, paired with roasted sweet potatoes. A hint of ketchup and my hunger was quelled.

Evening Feast: On the dinner plate was Gwyneth Paltrow’s Roasted Cauliflower with Chickpeas and Mustard, complemented with the remaining sweet potatoes. I chanced upon this recipe through a recommendation by Kara Goucher on Instagram. While it’s originally from Gwyneth’s “It’s All Good” cookbook, I managed to find an online version here. Heads up – I’d likely reduce the dressing’s oil next time. It felt slightly too rich for my palate.

Extra Nibbles (Unpictured): Can’t forget the indulgence of munching almost an entire pack of sweet potato crackers from Costco, dipped in hummus and salsa.

In reflecting on my day’s menu, I did notice a glaring miss – greens! Apart from the parsley in my cauliflower dish, it seems I gave them a skip. Time to incorporate a fresh salad in today’s plan!

Stay fueled, stay fit, and embrace plant-power. Have a fantastic Wednesday, everyone! 🌱🏃‍♂️🥗
